Eggplant Salami
Please keep in mind that making eggplant salami is like making regular salami, in that it takes time, effort and love to produce a quality cut of veggie.

What you will need:

1. an eggplant
2. olive oil
3. red wine vinegar
4. salt
5. pepper (coarsely ground or cracked black pepper)
6. spices: onion powder, garlic powder, Cajun spices, paprika
7. a bowl for soaking eggplant
8. a pan for marinating eggplant (like a pyrex lasagna pan)
9. cookie sheets for baking eggplant
10. about two days for marination

Here's the Method:

1. cut eggplant into small strips
2. soak eggplant slices in salty water for half an hour
3. drain salty water and soak eggplant in fresh salty water for another half hour (or simply repeat step 2)
4. drain salty water again then lay out eggplant slices in a deep dish like a pyrex casserole dish. (note: using a disposable metal lasagna pan will adversely effect the flavor of the eggplant.)
5. drizzle olive oil on eggplant slices
6. sprinkle spices on oily eggplant slices; there should be a layer of spice on each slice
7. douse sliced spiced eggplant with red wine vinegar
8. add another layer of eggplant slices and repeat steps 5-7 until all the eggplant has been marinated
9. marinate for as long as possible: for best results, two days; for a minimum, two hours
10. oil a cookie sheet and lay out eggplant slices
11. bake at 400° until eggplant is nearly burnt, turning eggplant slices over every 10-15 minutes; do not get concerned if some of it burns, it is quite tasty burnt
12. remove and put into a bowl or dish; best served on a rustic bread
